Ingredients:

– 4 large yellow onions, thinly sliced- 4 tablespoons unsalted butter- 1 tablespoon olive oil- 2 cloves garlic, minced- 1 teaspoon sugar- 1 tablespoon all-purpose flour- 8 cups beef broth- 1/2 cup dry white wine (optional)- 1 bay leaf- 1 teaspoon dried thyme- Salt and pepper, to taste- 1 baguette, sliced- 2 cups grated Gruyรจre cheeseInstructions:1. In a large pot or Dutch oven, melt the butter with the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and a deep golden brown, about 30-40 minutes. Add the garlic and sugar, and cook for an additional 5 minutes.2. Sprinkle the flour over the onions and stir well to coat. Cook for another 2-3 minutes to eliminate the raw flour taste.3. Add the beef broth, white wine (if using), bay leaf, and thyme to the pot. Bring the soup to a simmer and cook for 30 minutes, allowing the flavors to meld together. Season with salt and pepper to taste. Remove the bay leaf before serving.4. While the soup simmers, preheat your oven to 400ยฐF (200ยฐC). Arrange the baguette slices on a baking sheet and bake until they are lightly toasted, about 5-7 minutes.5. Ladle the soup into oven-safe bowls. Place a toasted baguette slice on top of each bowl of soup, and generously sprinkle with grated Gruyรจre cheese.6. Place the bowls on a baking sheet and broil in the oven until the cheese is melted and bubbly, about 3-5 minutes. Keep a close eye to prevent burning.7.
