Ingredients

 

Mashed Potatoes

 

2 lbs (900 g) potatoes (Russet or Yukon Gold)

 

4 tbsp unsalted butter

 

½ cup heavy cream (or whole milk, warmed)

 

Salt & black pepper, to taste

 

Optional: 2 roasted garlic cloves, mashed in

 

Salmon & Shrimp

 

2 salmon fillets (6–8 oz each, skinless)

 

10–12 large shrimp, peeled & deveined

 

3 tbsp unsalted butter

 

3 garlic cloves, minced

 

½ cup chicken broth (or dry white wine)

 

½ cup heavy cream

 

1 tbsp lemon juice

 

2 tbsp fresh parsley, chopped

 

1 tsp red pepper flakes (optional)

 

Salt & black pepper, to taste

 

Fresh thyme sprigs (for garnish)

 

Instructions

 

Step 1 – Make the Mashed Potatoes

 

Peel and cut potatoes into chunks.

Boil in salted water until fork-tender (about 15–20 min).

Drain and mash with butter, warm cream, salt, and pepper until smooth.

Keep warm.

Step 2 – Cook the Salmon

 

Pat salmon fillets dry. Season with salt and pepper.

Heat 1 tbsp butter in a skillet over medium-high heat.

Sear salmon (flesh side down first) for 4–5 minutes, flip, and cook another 3–4 minutes.

Remove and set aside.

Step 3 – Cook Shrimp & Sauce

 

In the same skillet, add 2 tbsp butter.

Sauté garlic for 30 seconds until fragrant.

Add shrimp, cook 1–2 minutes per side until pink. Remove and set aside.

Deglaze pan with chicken broth (or wine), scraping browned bits.

Stir in heavy cream, lemon juice, parsley, and red pepper flakes. Simmer 2–3 minutes until slightly thickened. Season to taste.

Step 4 – Assemble

 

Spoon mashed potatoes onto a plate.

Place salmon on top, add shrimp, and drizzle with garlic butter cream sauce.
