My Grandma’s Apple Strudel Recipe
Ingredients
For the dough
2 cups all-purpose flour
Pinch of salt
2 tbsp vegetable oil
¾ cup lukewarm water
For the apple filling
5–6 apples (Granny Smith or Honeycrisp), peeled & thinly sliced
½ cup sugar
½ cup raisins (optional)
½ tsp cinnamon
¼ tsp nutmeg (optional)
Juice of ½ lemon
½ cup breadcrumbs (lightly toasted in butter)
¼ cup chopped walnuts (optional)
For finishing
3 tbsp melted butter
Powdered sugar (for dusting)
Instructions
1. Make the dough
Mix flour and salt in a bowl.
Add oil and water, then knead until smooth.
Cover and let it rest for 30 minutes.
2. Prepare the filling
In a large bowl, combine apples, sugar, cinnamon, nutmeg, lemon juice, and raisins.
Toast breadcrumbs in butter until golden, then mix into the apples.
3. Stretch the dough
Place dough on a floured cloth or towel.
Roll it out, then gently stretch it until very thin (almost see-through).
4. Assemble the strudel
Brush dough lightly with melted butter.
Spread the apple mixture along one side.
Roll it up carefully using the cloth.
5. Bake
Place on a baking sheet.
Brush with more butter.
Bake at 180°C (350°F) for about 35–45 minutes, until golden.
6. Serve
Let cool slightly, then dust with powdered sugar.
Slice and enjoy warm
Tips (from traditional recipes)
Stretching the dough thin is key for that classic flaky texture.
Using tart apples balances the sweetness perfectly.
Breadcrumbs help absorb juice so the strudel doesn’t get soggy.
