Cheesy Rotel Beef Pasta (Crockpot Recipe)
Ingredients
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 (10 oz) can Rotel diced tomatoes with green chilies (do not drain)
2 cups beef broth
1 cup heavy cream
2 cups uncooked pasta (penne, rotini, or elbow macaroni)
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper to taste
Optional: chopped parsley or green onions for garnish
Instructions
Brown the Beef
Turn the crockpot on HIGH.
In a skillet over medium heat, cook the ground beef with the chopped onion until the beef is fully browned.
Drain excess grease. Add minced garlic and cook for 30 seconds until fragrant.
Add to Crockpot
Transfer the cooked beef mixture to the crockpot.
Add Rotel tomatoes (with juice), beef broth, heavy cream, paprika, garlic powder, onion powder, salt, and pepper.
Stir well to combine.
Cook
Cover and cook on HIGH for 1½–2 hours or on LOW for 3–4 hours, stirring occasionally.
Add Pasta
Add the uncooked pasta to the crockpot.
Stir well, cover, and cook on HIGH for 20–30 minutes, or until the pasta is tender.
Add Cheese
Stir in cheddar and mozzarella cheese.
Cover and cook for another 5–10 minutes until the cheese is melted and creamy.
Serve
Taste and adjust seasoning if needed.
Garnish with parsley or green onions if desired. Serve hot and enjoy!
