Marinated Cucumber, Onion, and Tomato Salad

Ingredients:

Medium cucumbers, thinly sliced 2

 

Medium red onion, thinly sliced 1

 

Medium tomatoes, chopped 3

 

Olive oil ¼ cup

 

Red wine vinegar ¼ cup

 

Sugar 1 tablespoon

 

Salt 1 teaspoon

 

Black pepper ½ teaspoon

 

Fresh dill, chopped 1 tablespoon

 

Instructions:

 

Combine the Vegetables: In a large bowl, combine the 2 thinly sliced cucumbers, 1 thinly sliced red onion, and 3 chopped tomatoes.

 

Make the Dressing: In a small bowl, whisk together the ¼ cup olive oil, ¼ cup red wine vinegar, 1 tablespoon sugar, 1 teaspoon salt, and ½ teaspoon black pepper until the sugar is dissolved and the dressing is well combined.

 

Marinate the Salad: Pour the dressing over the vegetables and toss gently to coat everything evenly. Sprinkle the 1 tablespoon of fresh dill over the salad and toss one more time.

 

Chill & Serve: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to marinate and meld together. Serve the salad chilled.
