Chicken with Spinach and Mushroom

Ingredients:

– 2 chicken breasts

– 2 tablespoons olive oil

– 2 cloves garlic, minced

– 1 cup sliced mushrooms

– 2 cups fresh spinach

– 1 cup heavy cream

– 1/2 cup grated Parmesan cheese

– Salt and pepper to taste

– Fresh parsley for garnish

 

### Instructions:

 

1. Cook the Chicken:

– Season the chicken breasts with salt and pepper.

– In a skillet, heat olive oil over medium-high heat. Cook the chicken breasts until they are golden brown on each side and cooked through. Remove from the skillet and set aside.

 

2. Prepare the Sauce:

– In the same skillet, add a bit more olive oil if needed. Sauté the garlic until fragrant.

– Add the sliced mushrooms and cook until they are soft.

– Stir in the spinach and cook until wilted.

– Pour in the heavy cream and Parmesan cheese. Stir until the cheese is melted and the sauce is creamy.

 

3. Combine Everything:

– Return the cooked chicken breasts to the skillet, coating them with the creamy sauce.

– Let everything simmer together for a few minutes to combine the flavors.

 

4. Serve:

– Garnish with fresh parsley and serve the chicken with spinach and mushroom in creamy Parmesan sauce hot over pasta or rice.
