Ingredients

For the Cod:

4 cod fillets (about 6 oz each)

Salt and freshly ground black pepper, to taste

For the Marinade:

2 tablespoons extra virgin olive oil

Juice of 1 lemon (about 2–3 tablespoons)

Zest of 1 lemon

3 garlic cloves, minced

For the Topping:

1/4 cup pine nuts, lightly toasted (toast in a dry skillet over medium heat until golden, stirring frequently)

1/4 cup fresh parsley, finely chopped

Optional Garnish:

Additional lemon wedges
