Ingredients:
2 cups Mountain Dew soda
3 cups granulated sugar
1 box powdered fruit pectin (about 1.75 oz)
Green food coloring (optional)
Instructions:
Sterilize canning jars and lids in boiling water.
In a large saucepan, combine Mountain Dew and powdered fruit pectin. Stir until the pectin is dissolved.
Bring the mixture to a rolling boil over high heat, stirring constantly.
Add all the sugar at once, stirring to dissolve completely.
Return the mixture to a rolling boil and boil hard for 1 minute, stirring constantly.
Remove from heat and skim off any foam with a metal spoon.
If desired, stir in a few drops of green food coloring to achieve the desired color.
Ladle the hot jelly into hot sterilized jars, leaving 1/4-inch headspace.
Wipe jar rims clean and place lids on the jars.
Process the jars in a boiling water bath for 10 minutes (adjust the time for your altitude if necessary).
Remove the jars from the water bath and let them cool completely on a towel-lined countertop.
Check seals after 24 hours. The lids should not flex when the center is pressed.
Store the jelly in a cool, dark place for up to 1 year.
