Ingredients
2 cups cooked chicken breast, finely chopped or shredded
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 large eggs
¼ cup mayonnaise
⅓ cup all-purpose flour
1 small zucchini, grated (squeezed dry)
2 tablespoons chopped fresh parsley
2 cloves garlic, minced
Salt and black pepper to taste
2–3 tablespoons oil (for frying)

Mix the batter:
In a large bowl, combine chicken, mozzarella, Parmesan, eggs, mayonnaise, flour, zucchini, garlic, parsley, salt, and pepper. Stir until well combined.
Heat the pan:
Heat oil in a large skillet over medium heat.
Form fritters:
Scoop about 2 tablespoons of mixture per fritter into the pan. Flatten slightly with a spatula.
Cook until golden:
Fry for 3–4 minutes per side, until golden brown and cooked through.
Drain & serve:
Transfer to a paper towel–lined plate to drain excess oil.
