Mini BBQ Meatloaf Bites

Servings: 12 (1 muffin tray)

 

Ingredients:

500 g (1 lb) ground beef

1 small onion, finely chopped

1 egg

1/2 cup breadcrumbs

1/4 cup milk

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

For the glaze:

 

1/3 cup BBQ sauce

2 tbsp ketchup

1 tbsp brown sugar (optional, for sweetness)

Instructions:

Preheat oven to 180°C (350°F). Lightly grease a muffin tin.

Mix the meat: In a bowl, combine ground beef, onion, egg, breadcrumbs, milk, and spices. Mix until just combined (don’t overmix).

Shape: Divide the mixture into equal portions and press into each muffin cup.

Add glaze: Mix the BBQ sauce, ketchup, and brown sugar. Spoon or brush it on top of each meat portion (just like in the image).

Bake: Cook for 20–25 minutes until fully cooked through.

Serve: Let them rest a few minutes, then remove and serve warm.

Tips:

 

You can swap beef with chicken or turkey.

Add cheese in the center for a stuffed version.

Serve with mashed potatoes, rice, or salad.
