Ingredients:
1 lb (500 g) ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 cup enchilada sauce (or seasoned tomato sauce)
1 can (15 oz) black or red beans (optional), drained
1 cup corn (optional)
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
6–8 tortillas (cut or whole, depending on your dish)
2 cups shredded cheese (cheddar or mozzarella)
Instructions:
Prepare the filling:
Heat a little oil in a pan over medium heat.
Add the chopped onion and cook until soft, then add garlic.
Add ground beef and cook until browned.
Stir in cumin, paprika, salt, and pepper.
Add enchilada sauce, beans, and corn (if using). Simmer for about 5 minutes.
Assemble the casserole:
Preheat oven to 350°F (180°C).
In a baking dish, layer tortillas on the bottom.
Add a layer of beef mixture.
Sprinkle cheese on top.
Repeat layers (tortillas → beef → cheese) until ingredients are used.
Finish with a layer of cheese on top.
Bake:
Bake for 20–25 minutes, until the cheese is melted and bubbly.
Serve:
Let it cool for 5 minutes before slicing.
Garnish with fresh cilantro or serve with sour cream if desired.
Tips:
You can swap beef for chicken or make it vegetarian.
Add chili flakes or hot sauce if you like it spicy.
You can use flatbread instead of tortillas if needed.
