Ingredients:

 

2 medium zucchinis, grated

1 lb (450g) ground chicken breast

1/4 cup almond flour

1/4 cup grated parmesan cheese

1 large egg

2 garlic cloves, minced

1/4 cup fresh parsley, chopped

Salt and pepper to taste

1 tbsp olive oil (for cooking)

Instructions:

 

Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel or paper towel.

In a large bowl, combine the ground chicken, grated zucchini, almond flour, parmesan cheese, egg, garlic, parsley, salt, and pepper. Mix until everything is well incorporated.

Heat the olive oil in a large skillet over medium heat.

Form the mixture into small patties, about the size of your palm, and place them in the skillet. Cook each side for about 4-5 minutes until golden brown and cooked through.
