Almond Raisin Tea Cake (Soft & Buttery Loaf)

Ingredients

 

 

 

1 ½ cups all-purpose flour

 

1 tsp baking powder

 

½ tsp baking soda

 

¼ tsp salt

 

½ cup butter (softened)

 

¾ cup sugar

 

2 eggs

 

1 tsp vanilla extract

 

½ cup milk or yogurt

 

½ cup raisins

 

¼ cup chopped almonds (plus extra for topping)

 

👩‍🍳 Instructions

 

Preheat oven to 180°C (350°F). Grease or line a loaf pan.

 

Mix dry ingredients: flour, baking powder, baking soda, and salt.

 

Cream butter & sugar until light and fluffy.

 

Add eggs one at a time, then mix in vanilla.

 

Combine: Add dry ingredients alternately with milk/yogurt.

 

Fold in raisins and chopped almonds.

 

Pour batter into the pan and sprinkle extra almonds on top.

 

Bake for 40–50 minutes or until a toothpick comes out clean.

 

Cool, slice, and serve.

 

🍰 Tips

 

Soak raisins in warm water (or juice) for 10 minutes for extra softness.

 

Add a drizzle of honey or syrup on top for a glossy finish.
