Crispy and Delicious Chicken Patties
Ingredients:
2 cups cooked chicken, shredded (you can use leftover chicken)
1 cup breadcrumbs
1 egg
1/4 cup grated cheese (optional)
1/4 cup finely chopped onions
1/4 cup finely chopped herbs (such as parsley or cilantro)
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Olive oil or cooking spray for frying
Instructions:
Prepare the Chicken Mixture:
In a large mixing bowl, combine the shredded cooked chicken, breadcrumbs, egg, grated cheese (if using), chopped onions, chopped herbs, garlic powder, paprika, salt, and pepper.
Mix all ingredients together until well combined. The mixture should hold together well; if it’s too dry, you can add a little more egg or a tablespoon of water.
Shape the Patties:
Take small portions of the mixture and shape them into round patties, about 2-3 inches in diameter. You should get around 10-12 patties, depending on the size.
Cook the Patties:
Heat a skillet or non-stick frying pan over medium heat. Add a little olive oil or cooking spray to coat the bottom.
Once the pan is hot, add the patties and cook for about 3-4 minutes on each side or until they are golden brown and crispy.
Serve:
Remove the patties from the pan and place them on a paper towel to drain excess oil.
Serve the patties warm, with your favorite dipping sauce or alongside a fresh salad.
