Ingredients:
2 medium zucchinis (grated)
4 large eggs
1 small onion (finely chopped)
2 cloves garlic (minced)
Β½ cup grated cheese (cheddar, mozzarella, or parmesan)
Β½ cup breadcrumbs (or flour)
2 tbsp olive oil
2 tbsp chopped fresh parsley (or herbs of choice)
Salt and black pepper to taste

Prep the zucchini
Grate the zucchini and squeeze out excess moisture using a clean towel.
Mix the base
In a bowl, combine zucchini, eggs, onion, garlic, cheese, breadcrumbs, parsley, salt, and pepper.
Mix until well combined.
Cook
Heat olive oil in a non-stick pan over medium heat.
Pour the mixture into the pan and press it down evenly (like a thick pancake).
Golden crust
Cook for about 8β10 minutes until the bottom is golden and set.
Flip
Carefully flip (use a plate if needed) and cook the other side for another 6β8 minutes.
Serve
Slide onto a plate, garnish with herbs, and slice like a cake.
