Grilled PineappleMini Cheesecakes

🍍 Grilled Pineapple

 

Ingredients

 

Fresh pineapple, cut into rings or spears

 

2 tbsp brown sugar (optional)

 

1 tbsp honey or maple syrup

 

Pinch of cinnamon

 

A squeeze of lime juice

 

Instructions

 

Preheat a grill (or grill pan) to medium-high heat.

Brush pineapple slices with honey/maple syrup and sprinkle lightly with brown sugar + cinnamon.

Grill for 2–3 minutes per side until caramelized with grill marks.

Finish with a squeeze of lime juice before serving.

👉 Great on its own, with vanilla ice cream, or as a topping for cheesecakes!

 

🧁 Mini Cheesecakes

 

Ingredients (makes ~12)

 

1 cup graham cracker crumbs (or digestive biscuits)

 

3 tbsp melted butter

 

16 oz (450 g) cream cheese, softened

 

½ cup sugar

 

2 eggs

 

1 tsp vanilla extract

 

Instructions

 

Preheat oven to 325°F (160°C). Line a muffin tin with cupcake liners.

Mix crumbs + butter, press a spoonful into each liner (the crust).

Beat cream cheese + sugar until smooth. Add eggs one at a time, then vanilla.

Pour batter over crusts, filling each ¾ full.

Bake 18–20 min until just set. Cool completely, then chill in fridge at least 2 hours.
