Keto Cheesecake Brownies

Ingredients

For the brownie layer:

 

1/2 cup melted butter

1/2 cup unsweetened cocoa powder

3/4 cup keto sweetener (erythritol or any low-carb sweetener)

2 large eggs

1 tsp vanilla extract

1/2 cup almond flour

Pinch of salt

For the cheesecake layer:

 

7 oz (200g) cream cheese, softened

1/4 cup keto sweetener

1 large egg

1/2 tsp vanilla extract

Instructions

Preheat your oven to 350°F (180°C) and line or grease a small baking pan.

Make the brownie batter:

In a bowl, mix melted butter, cocoa powder, and sweetener until smooth.

Add eggs and vanilla, then mix well.

Stir in almond flour and a pinch of salt.

Make the cheesecake layer:

Beat cream cheese and sweetener until creamy.

Add the egg and vanilla, and mix until smooth.

Pour most of the brownie batter into the pan (reserve a little).

Spread the cheesecake mixture on top.

Drop the remaining brownie batter over it and swirl with a knife.

Bake for 25–30 minutes until set.

Let it cool completely, then chill in the fridge for at least 1 hour for the best texture.

Tips

Add sugar-free chocolate chips for extra richness.

These taste even better cold!
