4 bone-in pork chops (about 1 inch thick)
4 slices of bacon, chopped
1 tablespoon olive oil
Salt and pepper, to taste
1/2 cup maple syrup
1/4 cup Dijon mustard
1/2 cup heavy cream
1 teaspoon garlic powder
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
1 tablespoon chopped fresh parsley (for garnish)

Preheat your oven to 400°F (200°C).
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon drippings in the pan.
Season the pork chops with salt and pepper on both sides. In the same skillet, add olive oil if needed, and sear the pork chops for about 4-5 minutes on each side until they are golden brown.
Once seared, transfer the pork chops to a baking dish and sprinkle the cooked bacon over the top.
In a small bowl, whisk together the maple syrup, Dijon mustard, heavy cream, garlic powder, and thyme. Pour the mixture over the pork chops.
Bake in the preheated oven for 20-25 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
Remove from the oven and let the pork chops rest for 5 minutes before serving. Garnish with chopped parsley.
