Peach Pecan Bread

Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1/4 cup plain Greek yogurt

1 teaspoon vanilla extract

1 1/2 cups diced fresh peaches (about 2 medium peaches, peeled)

3/4 cup chopped pecans, toasted

Optional: 1 tablespoon brown sugar for sprinkling on top

Directions

Preheat the oven: Preheat to 350°F (175°C). Grease a 9×5 inch loaf pan with nonstick spray or line with parchment paper.

Mix dry ingredients: In a bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg. Set aside.

Cream butter and sugar: Using an electric mixer, cream butter and sugar until light and fluffy, about 3 minutes.

Add eggs and yogurt: Add eggs one at a time, mixing well after each. Mix in Greek yogurt and vanilla extract until smooth.

Combine wet and dry: Gradually add dry ingredients to the wet, mixing just until combined.

Fold in peaches and pecans: Gently fold in peaches and pecans with a spatula.

Transfer to pan: Pour batter into prepared loaf pan. Sprinkle extra pecans and brown sugar on top if desired.

Bake: Bake for 55-65 minutes or until a toothpick comes out clean.

Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Slice and enjoy: Serve warm with coffee or tea.
