Roasted Potatoes with Caramelized Onions

Crispy roasted potatoes combined with sweet, golden caramelized onions—simple and very flavorful.

 

Ingredients

 

4 medium potatoes, peeled and cut into cubes

2 large onions, thinly sliced

3 tbsp olive oil or vegetable oil

2 cloves garlic, minced (optional)

1 tsp salt

½ tsp black pepper

1 tsp paprika

½ tsp dried thyme or rosemary (optional)

Instructions

 

1. Preheat the oven

 

Preheat oven to 400°F (200°C).

2. Prepare the potatoes

 

Place the cubed potatoes in a bowl.

Toss with 2 tbsp oil, salt, pepper, paprika, and herbs.

3. Start roasting

 

Spread the potatoes on a baking tray in a single layer.

Roast for 20 minutes.

4. Add onions

 

Toss sliced onions with 1 tbsp oil and garlic.

Add them to the tray with the potatoes and mix gently.

5. Continue roasting

 

Roast another 20–25 minutes, stirring once halfway, until potatoes are golden and crispy and onions are soft and caramelized.

Serving

 

Serve hot as a side dish with:

 

grilled chicken 🍗

steak 🥩

eggs 🍳

💡 Tip: For extra crispiness, soak the potato cubes in cold water for 15 minutes, then dry well before roasting.
