Sizzling Scallops with Zesty Lime Cilantro Sauce

Ingredients:

 

1 lb sea scallops, patted dry

 

2 tablespoons olive oil

 

1 tablespoon butter

 

Salt and pepper to taste

 

1/4 cup fresh lime juice

 

1 tablespoon lime zest

 

1/4 cup fresh cilantro, chopped

 

2 cloves garlic, minced

 

Instructions:

 

Prepare the Scallops:

 

Pat the scallops dry with paper towels. This step is crucial for a good sear.

 

Season both sides with salt and pepper.

 

Sear the Scallops:

 

Heat the olive oil and butter in a large skillet over medium-high heat.

 

Once the skillet is hot and the butter starts to foam, add the scallops in a single layer (do not overcrowd the pan).

 

Sear for 2–3 minutes on each side until golden brown and just cooked through. Remove scallops and set aside on a plate.
