Spinach & Cheese Quiche Crustless
Ingredients:
6 large eggs
1 cup milk or heavy cream
2 cups fresh spinach (chopped)
1 cup shredded cheese (mozzarella, cheddar, or mix)
1/2 cup crumbled feta cheese (optional)
1 small onion (finely chopped)
2 cloves garlic (minced)
1 tbsp olive oil
Salt and black pepper (to taste)
Instructions:
Preheat oven to 180°C (350°F).
Heat olive oil in a pan, sauté onion and garlic until soft.
Add spinach and cook until wilted. Let cool slightly.
In a bowl, whisk eggs with milk, salt, and pepper.
Stir in cooked spinach mixture and cheeses.
Pour into a greased baking dish or pie pan.
Bake for 30–40 minutes until set and golden on top.
Let it cool for a few minutes, slice, and serve.
Tips:
You can add mushrooms, chicken, or herbs for extra flavor.
For a low-carb version, keep it crustless .
